Buffalo chicken wings are the perfect way to spice up your Super Bowl party. Easy to prepare and a surefire hit with the guests, this finger food will make a great snack before and after kickoff. Ken Callahan, from New York City's Blue Smoke restaurant, was invited on "Today" to share his favorite recipe.
Buffalo Chicken Wings With Blue Cheese Dip
1/2 cup Texas Pete's hot sauce
1/4 cup melted butter
1/2 teaspoon lemon juice
1 dozen whole chicken wings
1 gallon vegetable oil
Mix together hot sauce, butter and lemon juice in a mixing bowl. Place oil in a stainless steel pot and heat to 350 degrees F. Gently place chicken wings in hot oil. Fry wings for 9 to 10 minutes until crispy and cooked through. Remove wings from oil and drain well. Toss in mixing bowl with the sauce and plate immediately.
Creamy Blue Cheese Dressing
Makes about 2 cups
2 tablespoons Chianti vinegar
1/2 teaspoon Worcestershire
1 teaspoon chopped garlic
1/2 cup chopped parsley
1 cup mayonnaise
1 cup sour cream
6 ounces blue cheese
Mix all ingredients together. Taste and adjust the seasonings. Use immediately or cover and refrigerate.
