TODAY correspondent Maria Menounous' father has been battling diabetes for more than 40 years. "Simple changes to his daily regiment made the difference," she said. Here, she shares one of her family's favorite recipes, courtesy of her mother, for a delicious and healthy meal that has helped keep her father on track.

Litsa's Diabetes-friendly lentil soup
Litsa Menounos

INGREDIENTS

2 cups water
1/2 cup olive oil
1 bay leaf
1/2 pound lentils
1 onion (diced)
3 cloves of garlic
1/2 teaspoon rosemary
Salt and pepper

DIRECTIONS

Cook all together until lentils are soft. Add one 7 ounce can of tomato sauce. Add one 1/4 cup of vinegar. Cook for 15 minutes.
