Who doesn't love a cold, frosty beverage at the beach? Celebrity chefs Tyler Florence, Giada De Laurentiis and Paula Deen share tasty drinks — both virgin and with alcohol — to help make your day in the sun a little more fun. Discover how to make a pomegranate and cranberry bellini, a watermelon margarita and Southern Comfort punch:

Virgin pomegranate and cranberry bellini
Giada De Laurentiis

8-12 servings

INGREDIENTS

1 cup ice
1 1/2 cups simple syrup, recipe follows
1 1/4 cups pomegranate juice, chilled
1 cup cranberry juice, chilled
1 (25.3 fl. oz.) bottle sparkling water, chilled
2 limes, thinly sliced
1 bunch fresh mint, for garnish
1/2 cup (2 1/2 ounces) pomegranate seeds, for garnish

Basil Simple Syrup

1 bunch fresh basil, washed and stemmed
2 cups sugar
1 cup water

DIRECTIONS

Special equipment: 6- to 8-cup capacity punch bowl.

Basil Simple Syrup: In a saucepan, combine basil, sugar, and water and simmer until the sugar is dissolved, 5 minutes. Cool, strain the simple syrup, and store in the refrigerator.

Place the ice in the punch bowl. Add the simple syrup, pomegranate juice, and cranberry juice. Stir well. Slowly pour in the sparkling water. Garnish with lime slices, mint sprigs and pomegranate seeds and serve.

TIPS

As an alternative to serving from a punch bowl, make the bellini mixture in a 6- to 8-cup capacity pitcher. Divide the pomegranate seeds between 12 champagne flutes. Add 1 slice of lime and 1 sprig of mint to each glass. Pour the bellini mixture into the prepared glasses and serve.

Watermelon margarita
Tyler Florence

8-12 servings

INGREDIENTS

2 oz tequila
Squeeze of lime juice
8 oz watermelon slushy mix
Margarita salt for rimming glasses
1/4 cup strong simple syrup (sugar dissolved in water, 3:1 ratio)
2 medium seedless watermelons (about 8 cups)
Ice cubes

DIRECTIONS

Add ingredients in a cocktail shaker and pour into a chilled, rimmed glass (short lowball-style glass).

Cut a top corner of the watermelon off on an angle and scoop out flesh so you have an empty vessel. Throw the watermelon in the freezer for an hour to chill, then blend watermelon with simple syrup and ice cubes. Add more ice cubes as you go until the mixture locks up and is firm enough to scoop (like gelato). Fold mixture back into the watermelon bowl — it should pile up nicely so you can see the mix. Nestle the whole watermelon bowl in a bed of ice so it stays chilled.
