Braised carrots with ginger

4 servings

INGREDIENTS

4 carrots, about 1 pound
Zest and juice of 1 orange
Zest and juice of 1 lemon
2 teaspoons finely minced fresh ginger
2 medium onions, peeled and minced
2 tablespoons olive oil
Salt and freshly ground pepper
2 tablespoons unsalted butter
2 tablespoons minced fresh cilantro

DIRECTIONS

Wash the carrots and slice thinly. Toss the carrots with the zest and juice of the orange and lemon, the ginger, onions, and oil, and season with salt and pepper to taste.

Warm the butter in a saucepan. When it is melted, add all the ingredients except the cilantro, and cook over medium-low heat for 20 minutes. Add the fresh cilantro and serve.

Pear-apple compote with honey

4 servings

INGREDIENTS

1 pound apples
2⁄3 pound pears
Juice of 1 lemon
1 tablespoon honey

DIRECTIONS

Peel, core, and dice the apples and pears. Pour lemon juice over them and toss. Into a heavy pan pour 1/2 cup water and the fruit mixture. Cover and cook over medium heat for 10 minutes, stirring occasionally to prevent the fruit from sticking or burning.

With a fork, crush the fruit coarsely while continuing to cook for another 3 to 5 minutes, or until the excess water evaporates. Remove from the heat, add the honey, and mix gently. Serve lukewarm or cold (if you store it in the fridge, take it out 30 minutes before serving).

Note: Play with different varieties of apples, pears, and honey to renew the taste of the compote. For a special treat, add a small scoop of ice cream.
