Three S Tart (Sweet, Spicy, Sour)

David Guas Yields 8 slices

INGREDIENTS

Orange glaze

.5 cup orange marmalade
1 tablespoon lemon juice
.5 tablespoon water

Tarts

3-4 cups fresh strawberries, sliced in half or quartered, depending on the size
orange glaze, for drizzling
.5 cup toasted sliced almonds
powdered sugar, for dusting

DIRECTIONS

Tarts:
Preheat oven to 350 degrees Fahrenheit.

Bake chilled tart shell (see above; dough should be chilled in the tart pan for at least 1 hour prior to baking) in preheated oven for approximately 20 minutes, until golden brown.  Allow the tart shell to cool.

Spread the jam over the bottom of the tart dough.  Spread the crème fraîche over the jam.  Place the strawberries base side down or arrange them however you like.  Using a pastry brush, drizzle the glaze over the berries while the glaze is still warm.  Sprinkle toasted almonds over the entire tart.  Finish with a light dusting of powdered sugar.

Orange Glaze:
In a small saucepan over low heat, melt the marmalade with the juice and the water, stirring as it melts.  Remove from the heat and strain through a fine mesh strainer into a small mixing bowl.
