Bahamian Boiled Fish
4 portions
INGREDIENTS
• 2 lb. of 8 oz. portions Fresh Nassau Grouper Filets (Save the Grouper head)
• 4 Irish potato (peeled, washed and cut into medium size pieces)
• 1 large onion (peeled and sliced)
• 2 stalk celery (washed and sliced)
• 2 limes (juiced)
• Bahamian Goat pepper (Finely minced. Do not use the seeds. Can be substituted with dried crushed red pepper flakes)
• salt to taste
DIRECTIONS
Place Grouper filets and head in pot with potatoes, onions and celery and add enough cold water to totally submerge these ingredients. Allow to slowly simmer over medium heat until fish is done. Add the lime juice and season with pepper and salt to taste.

Bahamian Johnny Cake
4 to 6 portions
INGREDIENTS
• 1 lb. Bread Flour (sifted)
• 1 ounce baking powder
• 1 ounce granulated sugar
• .5 ounce salt
• 6 ounce butter or shortening
• milk or water (enough to make the dough to a stick consistency, but still firm)
DIRECTIONS
In a bowl, add all ingredients, with the exception of the liquid. Then, with your hands, thoroughly blend the ingredients together. Add the liquid (a little at a time) and mix until the dough is soft. Press out the dough in a 9 inch buttered pan and allow to rest for 5 minutes. Bake for 1 hour at 325 F until golden brown.
