Frank's Pizza
Frank Terzoli (“Top Chef” Black Team)

INGREDIENTS

Pizza sauce

8 oz. tomato paste
6–8 pureed tomatoes
1-3 oz. onion, minced
2 cloves garlic, minced
10 grams oregano, finely chopped
30 grams basil, finely chopped
2 oz red wine

Crust

4 whole wheat pita bread rounds
salt and pepper
1/4 cup of olive oil

Suggested Toppings

1 oz. chicken sausage or prosciutto or 1/2 cup cooked chicken pieces
5-6 calamata olives, pitted
2 roma tomatoes, thinly sliced and seasoned with salt
2 cups of low-fat shredded mozzarella or 4-6 slices of fresh mozzarella

Greens mixture

dash of lemon juice
sprig of purple basil
1 cup of arugula

DIRECTIONS

Preheat oven to 350 degrees F.
In a saucepan, mix your tomato paste and tomato puree over low heat. Add onion, garlic, oregano, and basil. Top with wine, cover, and simmer for thirty minutes, stirring occasionally. Allow to cool slightly and set aside.
On your pitas, drizzle a dash of olive oil with salt and pepper and spread evenly.
Use amount of sauce to taste, and the toppings you prefer.
Lee Anne combines mozzarella slices with fresh tomatoes, prosciutto and the arugula topping. Another pizza is plain melted mozzarella cheese, and the last is a mixture of olives and sausage.
Add toppings to taste and place in oven. Cook just until cheese is melted and crust is crisp.
