Traditional Garlic Shrimp

INGREDIENTS

1/4 cup Spanish Olive Oil
6 Garlic cloves, peeled and thinly sliced
20 large shrimp (about a pound) peeled and deveined
1 Guindilla chili pepper (or your favorite dried chili pepper)
1 teaspoon Brandy
1 teaspoon chopped Parsley
Salt to taste

DIRECTIONS

Heat the olive oil in a medium saute pan over a medium-high flame. Add the garlic and saute until browned, about two minutes.
Add the shrimp and the chili pepper. Cook for two minutes. Turn the shrimp over and cook for another two minutes.
Pour in the brandy and cook for another minute. Sprinkle with parsley, add salt to taste and serve.

Figs with Spanish Ham

INGREDIENTS

8 fresh black Mission figs
3 tablespoons Spanish Extra Virgin Olive Oil
4 slices Jamon Serrano (Spanish cured ham), cut into 2-inch squares
2 teaspoons Sherry vinegar
1 tablespoon herb flowers (chives or thyme), optional for garnish

DIRECTIONS

Using a paring knife, carefully peel the figs (this is easy to do when the figs are firm).
Heat one tablespoon of the olive oil on a nonstick pan over a high flame. Sear the figs for 20 seconds all over, then put them on a serving dish.
Lay a square of the Jamon Serrano on top of each fig.
Whisk remaining 2 tablespoons oil with the vinegar in a small bowl and drizzle around the plate. Garnish with her flowers and serve.
