Children can be incredibly picky eaters, and getting them to eat fish for lunch isn't always easy. But that was the latest elimination challenge for the remaining aspiring chefs on a recent episode of the Bravo reality cooking series "Top Chef." Miguel Morales, who works in the kitchen of the Mandarin Oriental in New York City, was a member of the winning team and was invited to share the winning menu on “Today.” Here are the recipes:
INGREDIENTS
Monkey Diddy Dogs
Spider Chips
For the Monkey Diddy Dogs
1. Sift first five ingredients in one bowl. In a separate bowl, mix yolks and milk. In another bowl, whip whites.
2. Mix wet with dry, and fold egg whites into mix. Let it sit for 30 minutes in refrigerator.
3. Clean and ground fish, then make quenelles and freeze. (A quenelle is a light, delicate dumpling made of seasoned, minced or ground fish, meat or vegetables bound with eggs or panada. The mixture is formed into small ovals.)
4. Coat in batter and fry at 350° until golden brown. Add salt and pepper to taste.
For the Spider Chips
Cut potatoes in rigid cut, and fry in 375° oil until done.

Fruit Kabobs
Honeyed Vanilla Yogurt
For the Fruit Kabobs
Using a medium-sized melon baller, ball the watermelon and cantaloupe. Skewer a piece of each fruit onto the skewers.
For the Honeyed Vanilla Yogurt
Combine the yogurt, honey, and vanilla bean seeds. Separate the yogurt into two bowls and color one bowl with red food coloring, the other with blue food coloring.
Put colored yogurt into two squeeze bottles. Squirt red yogurt into serving vessel, swirl with blue yogurt.
